Decadent dairy-free Chocolate Mousse

fluffy, velvety smooth and oh, so chocolaty.

Well, I don’t really know what to say about this chocolate mousse. Other than when I started making it, it was so simple that I thought I would have to do at least 2 or 3 re-do’s to get it right. I bought 3 cartons and figured I’d wing it… Well you guys - sometimes keeping things simple is the best. It is SO good and I was SO excite,d that I called my mom, who, like me, loves chocolate mousse, and also like me, has a lot of the same food sensitivities. My husband even loves it, so I know I’ve done something right. Ima already thinking of all the things I could do with it… Chocolate silk pie, chocolate mint, as an ice cream base….

This Mousse is made with two - yes, two - ingredients, does NOT taste like coconut (like soooo many dairy-free chocolate flavoured things out there), stays fluffy and smooth even after being refrigerated for a day, is the perfect amount of sweet, and will change your dairy-free life. Also thanks to Lily’s chocolate…. it has no artificial, added or refined sugar. Yes, you heard me right. Instead, its sweetened botanically with stevia - without the stevia aftertaste.

Decadent Dairy-Free Chocolate Mousse

Prep time: 5 minutes (refrigeration 2-3 hours)
Cook time: 5 minutes
Serves: two

ingredients

  • 1 carton of Silk brand dairy-free whipping cream

  • 2/3 cup Lily’s dark chocolate chips

  • optional: splash of vanilla and pinch of salt.

method

  1. Pour carton of dairy free whipping cream into medium size bowl, reserve 1 cup and store this in the fridge.

  2. Melt chocolate over double broiler until fully melted, add whipping cream and whisk until combined

  3. Over a fine mesh seive, strain into medium size bowl

  4. Cover and refrigerate until cold (2-3 hours)

  5. Remove and whip using hand-held mixer with whisk attachment.

  6. Wash whisk, Remove 1 cup of reserved whipping cream from fridge, and whip.

  7. To serve - spoon mousse into small bowls, top with whipping cream and chocolate shavings if desired.
